Becs(1097 Days ago)Funny you should bring that up because bread-maker has come into my life as well! I ended up giving my boyfriend this great little bread machine made by Zojirushi. Though, it`s not quite Sullivan Bakery caliber, it`s actually very good and SUPER easy. It even has a setting so you can wake up to fresh bread. I also like it because it makes mini-loafs, so you don`t feel like you`re wasting food. So, long story short, though the bread-making isn`t coming along as well as I would have hoped, the bread-eating certainly is... :-/Flag as Inappropriate

You don`t necessarily need a starter. You can make bread with either dried yeast or a starter, such as a sourdough starter where you mix flour (rye flour is good) with water and leave it for a few days in a jar with a muslin covering until the naturally-occurring yeasts on the flour start to multiply into useable quantities. You would then mix this into all the water and half of the flour of a bread mixture and leave once again for 8-24 hours until it begins to bubble, before kneeding and leaving to rise etc. If you are using dried yeast, this step is not necessary.

I`ve got a copy of the Baking Bible by Linda Collister which I find very useable. But she also has a book exclusively on bread, "The Bread Book" which gets great reviews on Amazon.co.uk.

When baking, try to be a little flexible on weights, aside from salt (which is very important) and yeast. The amounts of flour and water will vary depending on a number of factors including the humidity in the atmosphere. This is nothing to be scared of. Quite the reverse. You will know by sight and feel when the consistency is right. (You may not believe this but it`s true to a staggering degree since even if you haven`t worked with dough before, you`ll likely have seen it.)

You`ll soon pick up the knack. I was intimidated by bread making for a long while but don`t think twice about it now and find it very therapeutic, which is weird, because I can`t eat gluten, dairy or yeast, so I usually bake bread for others!
